The roasting of grains provides a different set of flavors than provided by carmelizing.  With more intense colors and flavors, roasted grains are often used in small quantities.

DOUBLE ROASTED - This term is used to refer to a host of grains being both caramelized and roasted.  The process is different with each malting company so you may want to try each in your beer before deciding which is your preferred flavor.  These are sold under the names "Double Roasted" by Simpson (UK), "Extra Special" by Briess (USA),  "Special B" by Castle (Belgium), and Crystal 120L by Great Western (USA).
