Acidulated Malt

Acidulated malt is used to reduce ph in your beer. Using small amounts, 5% or less of the malt bill, can add a better working mash, intensify the fermentation, provide a lighter Pilsner color, ensure an improved flavor stability, and provide a well-rounded beer flavor. Exceeding 5% of the malt bill, such as using 10% adds an acidic flavor, or "sour" taste to the beer. The "sour" beer taste is sought after in some Belgian fruit beer recipes.
